Christmas Choco Mousse




This was an easy to make recipe which was a great hit in my family during the holidays.  This is surely a perfect dessert to prepare for Christmas so I thought this will be good to share.  I got this recipe from a cooking class I had with my office colleagues, tried it at home, and the kids love it!

Here's what you need as ingredients (serves 6-10 small portions):

2 eggs, separated
125g bitter chocolate
40g salted butter
2tbs fine sugar
1/2tsp vanilla paste (or 1tsp of liquid vanilla)
1cup whipping cream

Garnishing:
raspberries
blueberries
icing sugar



1. Over a pot of simmering water, melt the chocolate and butter in a bowl. Once melted, remove from heat and allow to cool.

2. Separate the egg whites from egg yolks.  
3. Lightly beat egg yolks and combine with choco mixture, then set aside.
4. Whip the egg whites adding sugar staggeredly and the vanilla until stiff peaks form (do not add sugar all at once, add small portion at a time).
5. Whip the cream until stiff peaks form.


6. Add the egg white into the chocolate mixture, one spoonful at a time. Gently fold in and incorporate all of the egg white mixture.  Do the same for the whipped cream, one spoonful at a time. (tip: do not overly mix, it is important to keep the "air", gently incorporate all the foam until you achieve a homogeneous brown color)
7. Pour into into desired container and chill (alternatively, keep in piped bag to store in freezer and preserve for longer days; when ready to serve, allow the frozen mousse to rest first else, you will have an "iced" mousse)  
8. Top with raspberries and blueberries
9. Dust with icing sugar and serve.
